5 Soups for a Healthy New Year (and an offer!)
It’s cold. The parties are done. The tree is down. We are returning to our “normal” routine and trying to get accustomed to eating meals that do not conclude with dessert. We are making soup to ease us into the new year. For my first post of 2015 (happy new year, dear readers!), I thought I’d offer you my homemade soup basics as well as a special offer to get your body moving and feeling great. But first, the food.
When I’m doing mundane home tasks, like taking down holiday decorations or organizing some disaster of a closet, I put on a pot for soup stock. If I have a chicken around, it’s homemade chicken stock or if I have a drawer full of sad looking vegetables looking for a mission, it’s homemade vegetable stock. You can easily freeze the stock in small batches (4 to 6 cups at a time is my preferred freezer stash) if you don’t use it right away. I’ve even been known to sip a warm mug of broth while making dinner. But if you’re not into letting pots bubble away on the stove for hours, you can use store bought stocks (or water!) for these recipes as well. I’ll begin with two articles I wrote for Food52 recently. These aren’t so much recipes as methods. Make them your own! The last three are tried and true healthy favorites. I’ll be making each before January is over, especially in light of what I have to say below.
