Arugula Salad with Strawberries and Feta

I took a few liberties with this recipe and made it into a salad I could probably eat just about every day as long as these ingredients are available!

  • 1 shallot, finely diced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 4 cups arugula
  • 1/4 cup sliced raw almonds
  • 1/4 cup crumbled feta cheese
  • 8 large strawberries, trimmed and sliced
  • In a small bowl, combine the shallot, salt, pepper and balsamic vinegar. Whisk in the olive oil slowly, then allow the dressing to sit at room temperature for at least 15 minutes. The shallot will soften a bit and the flavors will intensify.
  • Toss the arugula with the dressing, then add the almonds, feta and sliced strawberries and toss again. Serve immediately.
