Avgolemono Soup

My high school boyfriend worked at his family’s restaurant and I spent a fair amount of time there. One of my favorite dishes was this Greek lemon soup with orzo and up until now, I never attempted to recreate it. I don’t know what I was waiting for. This soup is soothing and creamy and extremely flavorful without being heavy.

  • 6 cups chicken broth, homemade if you have it
  • 3/4 cup orzo
  • 3 large eggs, beaten
  • 5 tablespoons fresh lemon juice (1-1/2 lemons)
  • 1-1/2 teaspoon grated lemon zest (from 1 lemon)
  • Kosher salt
  • White pepper
  • Fresh dill, for serving
  • In a large pot, bring the chicken broth to a boil. Add the orzo, reduce the heat, then cover and cook according to the directions on the package (typically 8 to 10 minutes). Remove from heat and set aside.
  • In a large bowl, beat the eggs until thick then whisk in the lemon juice and lemon zest. Slowly begin adding the hot broth to the egg mixture 1/2 cup at a time, pouring very slowly and whisking continually. If you can get a helper for this part (not a child, of course), it makes this step a little easier. Add a total of 2 cups of the hot broth to the egg mixture, then put the egg mixture back into the large pot. Return the pot to medium-low heat and warm through. Do not bring the mixture back to a boil to avoid curdling the eggs.
  • Season with kosher salt and white pepper. Serve hot with freshly chopped dill and a lemon wedge for garnish.
  • Quick Tips
  • 1. I typically say that you can substitute vegetable broth for chicken broth to make a recipe vegetarian. I would not do that here since there are so few ingredients and the chicken broths adds a significant component to the flavor of the soup.
  • 2. If you’d like to make this soup ahead of time, simply store it in the refrigerator and reheat it on the stove just before serving. You should be able to make the soup up to a day ahead of time.
