Balsamic Reduction Syrup

I originally made this syrup to drizzle over grilled fruit topped with creme fraiche (delish, definitely try this). However, it quickly became apparent that this syrup livens up just about any salad, improves many sandwiches and really should be kept within reach in the way that we use olive oil. Really.

  • 1 1/2 cups balsamic vinegar (see tips below)
  • 1/2 cup honey
  • 1 tablespoon sugar

  • Combine ingredients in a small saucepan. Bring to a boil over medium heat and continue cooking until reduced by half. Allow to cool, then keep refrigerated.
  • Quick Tips
  • 1. Buy the best balsamic vinegar you can afford. I like Fini.
  • 2. Do not let this mixture boil over. I made this painful mistake and learned the hard way why you never want to let hot sugar get all over your electric cooktop.
