Cucumber Salad

I can typically get my older son to eat cucumbers without a problem. This raw salad nicely accompanies Asian-themed dishes.

  • 1 large cucumber, partially peeled and thinly sliced
  • 1 tablespoon seasoned rice vinegar
  • 2 teaspoons soy sauce
  • 1/4 teaspoon five spice powder
  • 1/8 teaspoon white pepper
  • 1/8 teaspoon kosher salt

  • Place sliced cucumbers in a bowl. Season with vinegar, soy sauce, five spice powder, white pepper and salt. Toss to coat, then taste seasonings. Adjust as necessary.

  • 1. I like my cucumbers only partially peeled. To do so, run a vegetable peeler along the length of the cucumber skipping alternating sections. It will look striped.
  • 2. Five spice powder is blend of spices used in Asian cooking. It includes star anise, cinnamon, cloves, Sichuan pepper and ground fennel seeds.
  • 3. This dish is spiced, but not spicy. If you’d care for more heat, crank up the five spice as needed. You might also consider adding a bit of crushed red pepper.
