Grape Tomato Salad

This salad has some of the key flavors of tabbouleh without the bulgur wheat. It’s an easy side dish when you have an abundance of grape tomatoes.

  • 1 large garlic clove, pressed
  • 1/4 teaspoon kosher salt
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • 1/4 cup thinly sliced red onion
  • 1/2 cup basil leaves, plus more for garnish
  • 1/4 cup fresh mint leaves
  • 2 cups grape tomatoes, halved
  • 1 cup chopped cucumber
  • 1 tablespoon fresh lemon juice

  • In a small bowl, combine the garlic clove with the salt. Mash together to make a paste. Add the balsamic vinegar, olive oil and red onion. Allow to rest for 15 minutes.
  • In a large bowl, toss basil, mint, tomatoes and cucumber with the dressing. Add the lemon juice, and toss again. Garnish with julienned basil leaves.
