Grilled Garlic Chicken
  • 6 garlic cloves, finely chopped
  • 1 bunch scallions, finely sliced (white and light green parts)
  • 2 cups orange juice
  • 1/4 cup apple cider vinegar
  • 2 teaspoons dried oregano
  • 2 teaspoons kosher salt
  • 1/2 teaspoon crushed red pepper flakes
  • 4 skinless, boneless chicken breasts
  • Kosher salt
  • Black pepper
  • Combine garlic through red pepper flakes in a zip top bag. Pierce chicken breasts with a fork a few times on each side, then add to bag. Seal and refrigerate for one hour at room temperature or overnight in the refrigerator.
  • Heat grill to medium. Remove chicken from bag and discard marinade. Generously salt and pepper chicken breasts on both sides. Cook chicken on grill over direct heat until just cooked through (about 10 minutes per side). Serve.
