Gruyere Croutons

I like to make these using a hearty whole wheat bread but you can use anything you prefer. Sourdough works nicely as well.

  • 1 large loaf artisan whole wheat bread (about 1 pound), sliced evenly
  • 1/4 cup olive oil
  • Kosher salt
  • Black pepper
  • 1 cup grated gruyere

  • Preheat oven to 400 degrees F.
  • Place slices of bread on a baking sheet. Brush each slice with olive oil, then sprinkle with salt and pepper. Top with a few pinches of cheese then bake for 15 minutes. Tops should be golden brown and cheese should be melted. Serve warm or room temperature.
  • Serve with soups or salad.
  • Croutons will keep in an airtight container for a day or two.
