Heirloom Tomato, Burrata and Basil Salad

Burrata is a rich Italian cheese made from mozzarella and cream. It is melt in your mouth amazing! If you can find it, it’s well worth the effort. I can find it occasionally at Whole Foods. It can be found near the handmade cheese in the refrigerated case. This is a traditional Caprese salad using burrata.

  • 2 large heirloom tomatoes (any variety), roughly chopped
  • 8 oz. ball of burrata, cut into quarters
  • 8 large basil leaves, julienned
  • Olive oil
  • Sea salt
  • Freshly ground black pepper

  • Arrange the tomatoes on four plates. Add a piece of the burrata to the center of each plate. Sprinkle with basil leaves, then drizzle lightly with olive oil. Finish with a generous crank of sea salt and a few cranks of freshly ground black pepper. Serve immediately.

  • 1. You can also add prosciutto, if you’d like to make the salad slightly more substantial.
  • 2. If you cannot find burrata, a fresh buffalo mozzarella works nicely too. Find the variety that is packed in water. It should be in the same place where you are looking for burrata in the refrigerated case.
