Iced Coffee Smoothie

I love myself a good latte. But I discovered I can get a lot more out of my favorite caffeinated beverage with a burst of added calcium (more than milk, my friends), healthy fat, fiber and potassium. This is a smoothie-latte mash up, of sorts. Get your jolt and check breakfast off your to-do list all in one cup.

  • 1/2 ripe banana
  • 1/3 cup Growl Iced Coffee Concentrate¬†or 2 shots espresso
  • 1 cup unsweetened almond milk
  • 1 heaping tablespoon smooth almond butter
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 pitted date
  • 1/2 cup ice
  • Add the banana, coffee, almond milk, almond butter, vanilla, cinnamon, date and ice to a blender. Blend until smooth. Serve immediately. Store leftovers (what leftovers?!) in the refrigerator for up to a day.
  • Quick Tips
  • 1. When bananas turn overripe, I like to freeze them for smoothies. This recipe is a great use for frozen bananas, making it seem more like a milk shake. If you use a frozen banana, omit the ice.
  • 2. I used to make this drink with freshly brewed espresso. Lucky for me, I discovered Growl Iced Coffee Concentrate (made right here in DC, no less!) which classes this drink right up – and prevents me from having to fire up the espresso maker. This dreamy cold brewed bev is less acidic than regular coffee since it’s never heated. The flavor is smooth and nutty with just a hint of subtle chocolate. You can get it online here.
  • One bottle makes four drinks, but in this recipe, I’ve used a little more than 1/4 bottle because I’m a piggy like that.

  • 3. The date adds just a touch of sweetness. I don’t like mine very sweet, so I’ve used just one. You can add a second date to make it a little sweeter or try using agave syrup, which also works well.
  • 4. Believe it or not, almond milk has more calcium than cow’s milk. It also has less sugar (none, in the case of unsweetened), no cholesterol and a healthy dose of potassium and vitamin E. Take that, bowl of cereal.
  • 5. Yes, I realize the tips are getting to be longer than the recipe. Want to turn this smoothie into a mocha? Add 1 tablespoon of unsweetened cocoa and get ready to howl. You probably didn’t even notice this drink is vegan, did you?
