Lemon Baked Salmon with Broccolette and Bulgur

Adapted from Real Simple (April 2011)

I love a dish that can be thrown together easily. This clean and healthy selection is that very dish – perfect for a weeknight. I used broccolette, which is a kinder, sweeter cousin of broccoli. Feel free to use broccolini, green beans or asparagus instead, if you prefer.

  • 1 cup bulgur
  • Kosher salt
  • Black pepper
  • 1-1/2 cups chicken or vegetable broth
  • 1 pound broccolette (or other green, stalky vegetable), washed and trimmed
  • 4 – 6 oz. salmon filets, skin removed
  • 1 lemon, thinly sliced
  • Fresh dill, chopped
  • Olive oil
  • Preheat oven to 375 degrees F.
  • Spread bulgur evenly along the bottom of a shallow baking dish. Sprinkle with 1/4 teaspoon kosher salt and 1/4 teaspoon pepper. Pour the broth over the bulgur, then lay the broccolette on top in a single layer. Finally, place the salmon on top of the broccolette. Sprinkle fish with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Place lemon slices on top, then cover tightly with foil.
  • Bake on the middle rack of the oven until salmon is cooked through, about 30 to 35 minutes. Bulgur and broccolette should be tender. Remove from oven and sprinkle with fresh dill. Drizzle with olive oil to finish and serve salmon, bulgar and vegetables with lemon slices on top.
  • Quick Tips
  • 1. I’ve said it before but it bears repeating. There are only a handful of ingredients here, so select the freshest you can find.
  • 2. If your fishmonger doesn’t sell salmon with the skin already removed, simply ask to have it removed before they pack it up for you. The skin often helps the fish retain moisture and flavor, but with this dish it is easier to have the skin completely removed.

    I love this recipe for an easy weeknight meal. I can get home, get it ready and in the oven, and then have time to spend with my kids while it cooks. Plus, almost no extra dishes! Any chance you have other versions of this that you’ve tried successfully?
