Lemony Lentil Salad

This fiber and protein-rich salad is a snap to make if you use pre-cooked lentils, such as those found at Trader Joe’s.

  • 3 tablespoons olive oil
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1-1/2 teaspoons Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1-1/2 cups cooked green or brown lentils
  • 1 red pepper, cored, seeded and chopped
  • 1 yellow pepper, cored, seeded and chopped
  • 1 orange pepper, cored, seeded and chopped
  • 4 scallions, trimmed and thinly sliced (white and green parts)
  • In a large bowl, whisk together olive oil, lemon zest, lemon juice, mustard, salt and pepper. Add lentils, chopped peppers and scallions. Toss to combine. Serve cold or room temperature.
  • Quick Tips
  • 1. If you don’t have pre-cooked lentils on hand, cook 1-1/2 cups brown or French green lentils in a saucepan of generously salted boiling water. Allow them to cook for about 15 minutes, or until tender. Drain and rinse under cold water before proceeding.
  • 2. This is perfect picnic food!
