Pasta with Turkey Sausage Meatballs, Broccolini and Garlic

This fast and easy dish is perfect for kids and adults alike. My crew loved this combination and I loved that it barely took much longer to assemble than the pasta’s cooking time.

  • 1 pound short pasta (I used trottole)
  • 8 oz. broccolini, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 pound sweet Italian turkey sausage links
  • 2 garlic cloves, thinly sliced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Freshly grated Parmesan cheese

  • Bring a large pot of generously salted water to a boil. Cook the pasta according to package directions for al dente. Add the chopped broccolini to the pasta water 2 minutes before the pasta finishes cooking. Scoop out 1/2 cup of the starchy cooking water, then drain pasta and broccolini into a colander and set aside.
  • In a large skillet, heat the oil over medium high heat. Squeeze the sausage casing so that 1-1/2 inch pieces come out. Roll into balls with your fingers, then place them into the hot oil. Continue until you’ve worked your way through all the sausage. Allow one side to brown, then turn them over and cook until no longer pink, about 10 minutes. Add the garlic to the pan and cook for another couple minutes, or until the garlic is lightly browned and fragrant.
  • Add the pasta back to the pot, then toss in the sausage and garlic mixture. Use a splash of cooking water to help it all come together. Add the salt and pepper, then check seasonings and adjust as necessary.
  • Serve with Parmesan.
