Tomato-Basil Salsa

Adapted from Bobby Flay’s Mesa Grill Cookbook

Fresh salsa is so easy to make and it only takes a few minutes. If you have fresh tomatoes and basil on hand, this only adds another 10 minutes to your prep time.

  • 3 ripe tomatoes, seeded and roughly chopped
  • 1/4 cup finely diced red onion
  • 2 cloves garlic, smashed and finely chopped
  • 1 tablespoon finely chopped fresh jalapeno pepper
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped fresh basil
  • Kosher salt
  • Freshly ground black pepper

  • Combine all ingredients in a bowl. Allow to sit at room temperature for at least 15 minutes before using. Store in a tightly covered container in the refrigerator (can be made up to 1 day ahead).
