Turkey Sliders with Tahini Sauce

These cute little patties were a hit with kids and adults alike. Great for dinner and perfect for the lunchbox, too.

    • For the sauce:
    • 2 garlic cloves
    • 1/4 cup tahini
    • 1/2 cup fresh lemon juice
    • 1/2 teaspoon kosher salt
  • For the sliders:
  • 12 ounces ground turkey (7% fat or more, preferably)
  • 1/4 teaspoon allspice
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon crushed red pepper flakes
  • 2 tablespoons chopped fresh mint leaves
  • 2 scallions, trimmed and diced (white and light green parts)
  • 1 teaspoon kosher salt
  • 1 cup quinoa, cooked and cooled
  • 1 tablespoon canola oil
  • 1 English cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 4 whole wheat pitas

  • To make the sauce, combine the garlic cloves, tahini, lemon juice and salt in food processor. Process until smooth. Taste seasonings and adjust as necessary. Cover and refrigerate until ready to serve.
  • To make the patties, place the turkey, allspice, cumin, red pepper flakes, mint, scallion and kosher salt in a food processor and pulse until combined. Add the cooked quinoa and process the mixture for about 2 minutes, or until it comes together in the center of the bowl.
  • Using lightly oiled hands, form 2 tablespoons of meat mixture at a time into small patties by making a ball, then flattening it slightly. You will get about 20 to 22 patties total.
  • Heat the oil in a large skillet over medium heat. You will need to make the sliders in two batches. Once the oil is very hot, add the first batch of sliders. The tricky thing is that their color will make it hard to know when they are done. You will need to press on them gently with a spatula to feel them become firm and cooked. They should take about 6 to 8 minutes per side. Once the first side is nicely browned, flip them and cook for another 6 to 8 minutes. Move cooked patties to a plate and cover with foil to keep warm while you cook the next batch. Add a little more oil to the skillet if it seems dry.
  • Serve sliders with cucumber slices, red onion slices, warm pita bread and tahini sauce on the side.
