Warm Peach Cardamom Compote

If you have a load of ripe peaches, this is a terrific way to enjoy them. I like them over oatmeal or my favorite pancakes.  Or a fat scoop of creamy vanilla ice cream (smile).

  • 2 pounds ripe peaches, peeled and cut into wedges
  • 1/4 cup brown sugar
  • 1/4 cup orange juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • Pinch kosher salt

  • Place the peach wedges, sugar, orange juice, cinnamon, cardamom and salt into a medium saucepan. Bring the mixture to a boil, then reduce heat to a simmer and allow to bubble gently uncovered for about 20 minutes. The mixture should appear syrupy and thick. Serve immediately, or cool completely and store covered in the refrigerator.

  • 1. Peeling peaches need not be a drag. First, score the bottoms of the fruit, making a large X with a sharp knife. Drop the peaches in boiling water for about a minute to loosen the skin. Immediately plunge them into cold water. When cool enough to handle, peel the skin away beginning with the bottom of the fruit at the center of the X.
  • 2. I like thick wedges of peach, but if you prefer, you can cut the peaches into bite-sized chunks before combining them with the sugar and spices. It’s a matter of personal preference.
