Warm Sesame Noodles

These are a great accompaniment to the thai-spiced beef lettuce wraps. The simplicity of this dish makes it a hit with kids.

  • 8 oz. soba noodles or whole wheat spaghetti
  • 2 tablespoons chopped peeled fresh ginger
  • 1/4 cup chopped scallions, white and green parts
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 large garlic clove, roughly chopped
  • Fresh cilantro, chopped (optional)
  • In a large pot of boiling, generously salted water, cook the noodles according to package directions for al dente. Drain well and set aside.
  • Meanwhile, place ginger, scallions, soy sauce, sesame oil, rice vinegar, honey and garlic in a food processor. Process until smooth.
  • Toss noodles and sauce together in a bowl. Serve warm topped with cilantro.
  • Quick Tips
  • 1. If you like peanuts, try adding 1/4 cup smooth peanut butter to the sauce. You will add it to the sauce before you puree it in the blender.
  • 2. To make these noodles into an easy vegetarian main dish, add snow peas and tofu for fiber and protein. Voila!
  • 3. These noodles are also tasty cold. Perfect for lunch boxes!
