Watermelon Feta Salad

This is what summer tastes like. This cool salad is perfect for those hot days when cooking just isn’t in the cards.

  • 4 cups mixed greens
  • 2 cups peeled, seeded watermelon cubes
  • 1 cup chopped cucumber
  • 1/2 cup fresh mint leaves, torn
  • 1/2 cup crumbled feta cheese
  • Everyday Vinaigrette
  • Freshly ground black pepper

  • Spread greens evenly on two large chilled plates. Top each plate with half the watermelon, cucumber, mint and feta. Drizzle vinaigrette over each salad, then finish with a few generous cranks of the pepper grinder. Serve.
