This is not my idea of an April Fool’s Day joke, I swear. So what is that hideous, bezoar-like object pictured above? And is it really something I’m suggesting you purchase and serve to your loved ones? To eat? That, my friends, is celeriac. Also known as celery root. Just when you thought the featured ingredients were taking a turn for the prettier, I present you with this ugly duckling. I am not a fan of celery. I’m not sure if it’s the strings, the flavor or what it is that I find offensive. This vegetable bears a modest resemblance to celery in terms of flavor, but the texture is more in line with what I imagine would be the product of a potato-parsnip marriage. Bottom line is that I think it’s lovely and different. Before you get carried away judging a book by its shabby cover, try it and see for yourself.

I can’t let this first day of April get by without some sort of tomfoolery. Our splurge this week is just that – a fruit fool. I’d never made a fool before and I should note that this classic English dessert has been tweaked slightly to make it a tad more nutritious and a bit less… well… foolish. And while we’re on the topic of splurges, you may be interested to know that Weekly Greens will be evolving to an all-splurge, all-the-time format effective next week. Who needs dinner anyway? I’m pretty sick of buying, chopping and serving vegetables week after week. Besides, I think I’ve run out of produce items to feature. Let’s just cut to the chase and get to the good stuff. Stay tuned for our next feature ingredient: Dutch-process cocoa.

2 celeriac (celery root), 1-1/4 pound each

1 Yukon gold potato

1 Granny Smith apple

1 pound broccolette or other green stalky vegetable

2 carrots

1 celery

2 heads garlic

1 yellow onion

2 limes

1 orange

1 lemon

Fresh mint

Fresh thyme

Fresh marjoram

Fresh dill

 

Meat / Fish

3 pounds rack of lamb (2 racks)

4 – 6 oz. salmon filets

3 pounds chicken parts with skin and bone

8 oz. ground turkey

Dairy/Refrigerator/Freezer

2 cups 2% Greek yogurt

1 pound fresh cheese tortellini

Pesto

Pantry Staples

1 cup bulgur wheat

Whole wheat bread crumbs

28 oz. can diced tomatoes

1 cup small pasta
