Beef Tenderloin with Fresh Thyme

This is an incredibly simple way to serve steak. I typically like to use the grill, but once the weather turns cooler this is a reasonable alternative. The thyme in my garden is growing out of control, so this recipe offered an opportunity to cut it back a bit.

  • 4 – 6-oz. beef tenderloin steaks
  • Kosher salt
  • Black pepper
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon olive oil

  • Sprinkle the steaks liberally with salt and pepper on all sides. Rub the chopped thyme into the meat, then allow it to sit on the counter at room temperature for 15 minutes.
  • Heat the olive oil in a large skillet over medium-high heat. Cook the steaks to the desired temperature. You will get a nice, crispy crust on each side. For medium-rare, this should take about 3 minutes per side assuming steaks are 1-1/2 inches thick).
