Grilled Corn with Cumin Lime Butter

I hate when I make something up and I’m too sloppy to immediately write down what I did. It doesn’t happen very often but it did with this corn. Doh! Below is my best approximation. I’ll try to be more mindful next time, I promise.

1 tablespoon unsalted butter, softened
1 teaspoon ground cumin
Juice of 1/2 lime (about 1 tablespoon)
1/2 teaspoon salt
1/4 teaspoon white pepper
4 ears sweet corn
Lime wedges, for serving

Heat a grill to medium high heat.
In a small bowl, use a fork to mash the softened butter with the cumin, lime juice, salt and white pepper. Set aside.
Grill the ears of corn directly on the grate, rotating frequently, until the kernels are lightly charred. Remove from the heat and slather with the butter mixture. Serve with lime wedges.

So easy and yet so delicious! We will make our summer corn this way from now on.
