Pesto Pea Salad

Adapted (barely) from The Barefoot Contessa at Home

This easy salad is delicious and so incredibly simple. If you are looking for a new use for pesto, this is a great choice.

  • 2 cups frozen peas, thawed
  • 4 cups loosely packed baby spinach leaves
  • 1/2 cup Fresh Basil Pesto
  • 1/4 cup shredded Parmesan cheese
  • 2 tablespoons toasted pine nuts
  • 1/2 teaspoon kosher salt
  • Combine all ingredients in a bowl and toss until well blended. Serve.
