Roasted Parsnips

This is so simple it’s almost not even a recipe. The high heat creates a lovely, sweet accompaniment to seafood and chicken dishes.

  • 8 large parsnips, peeled and cut into 2 inch lengths
  • 1 tablespoon olive oil
  • Kosher salt
  • Ground white pepper
  • Preheat oven to 400 degrees F.
  • Spread parsnips evenly on a rimmed baking sheet. Drizzle with olive oil, salt and white pepper, then toss to coat.
  • Roast for 15 minutes, then turn with a metal spatula. Roast for another 15 minutes, or until browned and slightly crispy.
  • Serve hot.
