Shrimp Gratin for Two

This decadent meal is both quick and delicious. Serve it with crusty bread to mop up the tasty juices. A crisp green salad on the side and a glass of white wine make it a meal.

  • 1 pound shrimp, peeled, deveined, tails removed
  • 1 tablespoon olive oil
  • 1 tablespoon dry white wine
  • Kosher salt
  • Black pepper
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 small shallot, minced
  • 1 tablespoon fresh flat-leaf parsley
  • 1 teaspoon minced rosemary leaves
  • 1/8 teaspoon crushed red pepper flakes
  • Grated zest from 1/2 lemon
  • 1 tablespoon fresh lemon juice
  • 1 extra-large egg yolk
  • 1/3 cup panko (Japanese bread crumbs)
  • Lemon wedges, for serving
  • Preheat oven to 425 degrees F.
  • Butterfly the shrimp by running a sharp knife along the smooth backside about 3/4 deep. Place shrimp in a bowl and combine with olive oil, white wine, 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss gently to combine. Allow to sit at room temperature while you prepare the panko mixture.
  • In a small bowl, mash the butter with the garlic, shallot, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko and 1/8 teaspoon each salt and pepper. Mix until blended then set aside.
  • In an oval baking dish, arrange butterflied shrimp with the cut side down starting along the outer edges and working inward. Tails will point in the air a bit. Pour the rest of the marinade over the shrimp, then top evenly with the panko mixture. Bake for about 12 minutes. Shrimp should be pink and just cooked through. To brown the top, turn the broiler on and leave the dish in the over for another minute or two.
  • Serve hot with lemon wedges on the side.

  • 1. Using shrimp that have been peeled and deveined greatly reduces prep time with this dish.
  • 2. This dish would also be delicious served over a bed of hot pasta.
