Thyme-Roasted Tomatoes

This is the perfect summer side dish. Enough said.

  • 6 medium tomatoes, halved
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon kosher salt

  • Preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment paper. Spread tomato halves over parchment and drizzle with olive oil, thyme leaves and salt. Roast for an hour and a half, until collapsed.
